Simple Mango Salad with Tilapia

I’ve had many friends tell me they don’t have much time to cook a healthy homemade meal or can’t cook at all, so I wanted to share a simple, light, tasty, and fresh recipe that anyone could make. Only chopping and mixing required for this dish!  You could really cut these veggies however you like, cubed or sliced depending on how you want to serve them.

1 Large (almost ripe) Mango
1 Lime

1/2 English Cucumber 
10 Cherry Tomatoes (Small)
1/2 Large Avocado
1/2 Red Onion
1/4 Cup Rice Vinegar
1 Bundle of Fresh Cilantro
1/4 Tsp Sea Salt
1/4 Tsp Crushed Black Pepper


Chop all Vegetable and Fruit ingredients into cubes,
If you havent cut up a mango before;
~peel it with a peeler or a pairing knife
~cut four sides off, around the core (much like an apple)- mangos have a fibrous core that is hard to eat (but great to chew on for the sweetness)
~slice these four pieces into cubes.
Place in large bowl
Add Cilantro
Add Lime Juice and Mix
Season w/Salt & Pepper 
Add Rice Vinegar 
Chill for at least 10 minutes and up to 3 days
This salad is great paired with Tilapia Fillets and Brown Rice
Tilapia Fillets-
Tilapia Seasoning Ingredients:
Mrs. Dash  No Salt Seasoning
Sea Salt
Garlic Shavings
1 Lime
Season each side of Fillet
Bring a saute pan to med low heat and add in a tsp of Coconut Oil
Gently lay the fillets in the pan, making sure to not over crowd (adding too much to a pan causes the pan temperature to drop, slowing the cooking. You want these thin fillets to cook quickly so they don’t get dry)
Cook on medium-low for 2-3 minutes on each side
Serve w/ steamed Sprouted Brown Rice OR just the Mango Salad
**Mango Salad, and all fresh fruits and veggies,  goes great with spicy or strong flavored dishes like BBQ on a hot Summer Day.
