Simple Mango Salad with Tilapia

I’ve had many friends tell me they don’t have much time to cook a healthy homemade meal or can’t cook at all, so I wanted to share a simple, light, tasty, and fresh recipe that anyone could make. Only chopping and mixing required for this dish!  You could really cut these veggies however you like, cubed or sliced depending on how you want to serve them.

Ingredients:
1 Large (almost ripe) Mango
1 Lime

1/2 English Cucumber
10 Cherry Tomatoes (Small)
1/2 Large Avocado
1/2 Red Onion
1/4 Cup Rice Vinegar
1 Bundle of Fresh Cilantro
1/4 Tsp Sea Salt
1/4 Tsp Crushed Black Pepper

Almond Cinnamon Crusted Chicken Tenders

Do you ever miss the crunch of chicken strips? I do- Im a texture person and I love crunchy foods! This is a great alternative and can be altered to be more spicy (cayanne) or more aromatic (cinnamon) or both together for a very flavorful punch!
Ingredients:
4oz Chicken Tenders
1 Egg White
1 tsp Cinnamon
1/2 cup Sliced Almonds (you want the pieces to be thin so they stick, if they are too thick and heavy they will fall off)
Sea Salt
Garlic (fine chopped fresh or dried, use less if fresh)
Coconut Oil
Plain Greek Yogurt (optional)
Barley Brown Rice

Protein Cookies! Peanut Butter, Coconut & Almond,

These are a GREAT option when are having a sweets craving but don’t want to ruin your diet OR as a pre or post workout protein snack (cause the oats and protein mix)… and they are so easy to make.

Pre Heat Oven to 350

Ingredients:
1 1/2 cup Oat Flower (you can make this at home by blending raw oats in a food processor or blender)
1/4 cup Vanilla Protein Powder
1 tsp Pure Baking Soda
1/2 cup Chopped Almonds
1 tbs Cinnamon
8 packets Stevia in the Raw
1/2 cup Peanut Butter & Coconut Spread
2 tsp Vanilla Extract
1/4 cup Olive Oil
2 Whole Eggs
60% Dark Chocolate Chips (optional)

Diets Kill- Food Lives- or something kinda close to that

As I wrap up my third week of my new lifestyle I am finding myself questioning things I never even knew I needed to know, discovering sides of myself I didn’t think existed and for the first time in my life, feeling like I honestly never knew how little I know. To me these all sound like huge life changing things- and I’m just working out more, right? So what gives? 9d1377408c51e7a196249a1e10e6cb3f

Well apparently I’m not just working out, I’m learning how to live better, not just survive. Probably the biggest contributor to these much larger life revelations is the slow but steady revelation that food, and what I put in my body, is a much larger factor in attempting to reach my goals. And not only food, but everything in my life is intertwined. I can’t just go to the gym 3, 4, 5 hours a week and work hard and think “there, I am finally doing it- I am finally going to get sexy”.

Healthy Greek-ish Salad

When I am prepping for a show one of the hardest things is coming up with dishes I LOVE to eat.. and that I won’t wreck my diet. I can eat carbs and I definitely can eat protein but I have to eat them at certain times so really I can only snack on veggies when I just need to stuff my face at random times, so over time I started playing around with a lot of seasonings and combinations and this was one of the first dishes I came up with and really loved. The secret is the garlic and onions. Ha Ha. Its probably not great if you are at work or about to go to a party, but it sure satisfied my taste buds. And on note is to make sure you look at your Balsamic Vinegar label. Some can obtain a lot of sugar.
